Heavy rain before vintage affected some earlier varieties, with sugar levels a bee’s lower than expected for the Chardonnay. Fruit picking in the first weeks of February was then crushed, de-stemmed, chilled and transferred to the press. The juice was clarified and fermented at temperatures of 14° – 16°C using a particular yeast to optimise varietal expression, before the wine’s blended and filtered for bottling.
