‘Outback Jack’ Pinot Grigio says g’day! This young lad’s a light, crisp and refreshing type with tingly acidity, with a growing reputation for green apple and citrus aromas, a palate of lime, lemon and pear flavours combined on a fresh and zesty finish.
Vineyard’s drought conditions provided warm and dry weather in the Riverina. Yields were lowish with heavy rain before vintage affected some earlier varieties, with alcohols a little lower than expected. ‘Jack’s’ Pinot Grigio was harvested during the first few days of February.
At the winery, the fruit was crushed, de-stemmed and chilled to our bag presses, where the pink juice undergoes oxidative treatment to remove any bitter tannin and colour from the red skins. The juice is then fermented at 14° – 16°C using a selected yeast to optimise varietal expression. Finally, the wine is blended and filtered for bottling, as soon as possible, to retain freshness and crisp fruit flavours.
