Our Outback Semillon Sauvignon Blanc is check full of surprises. Aromas of passionfruit, lemon zest and fresh parsley. A palate that pops from lime citrus and honey dew into tropical flavours. All with a lengthy crisp acidity into a freshly cut green apple finish. Phew!
The vineyard’s drought conditions meant yields were lowish with heavy rain before vintage affecting some earlier varieties, with alcohols a tad lower this time. Jack’s Semillon and Sauvignon Blanc grapes were harvested at night in February. At the winery, the fruit was crushed, destemmed and chilled to our bag presses. Then the juice is clarified and fermented at temperatures of 14° – 16°C using a carefully selected yeast for Jack’s varietal expression. Jack’s Semi-SavvyB is finally blended and filtered for bottling – ASAP – for his best freshness and crisp fruit flavour.
